During a recent trip to Dubai we were delighted to “bump into” the renowned chef Tom Kitchin, who was preparing a banquet at the world famous Jumeirah Hotel where our salmon formed part of the sumptuous dining on offer.


At the age of 29, Tom was awarded his first Michelin star, after The Kitchin restaurant in Edinburgh had been in business for six months. This made Tom the youngest Michelin star recipient in the world..Albert Roux is reported to have said that Tom is the chef in Scotland most likely to win three Michelin stars. His cooking style is to combine French techniques with seasonal Scottish ingredients, a style discussed in depth in his 2010 book From Nature to Plate.
